Throughout the Master’s, each working team of 4-5 students develops an experimental gastronomic tasting menu of 15-18 courses. The project is structured in several phases, from conceptual design to technical execution, always with the support of the teaching team.
The final result is presented in a dinner service before a jury of industry professionals, guest chefs and Basque Culinary Center lecturers, who assess the technical result, the creative proposal and the gastronomic experience.
In this Master’s, internships are carried out in both national and international companies. You will receive advice from the program coordinator to evaluate options and adjust expectations.
It is important to bear in mind that internships require three months of full-time dedication. If you have a senior profile, you may validate previous experience.

Sous chefs, chefs de partie and cooks with restaurant experience, who work in gastronomic, contemporary restaurants or other culinary projects, and want to refine their technique, broaden their product knowledge and develop their own creative judgement.
Kitchen professionals with experience across different sections, interested in acquiring a global vision of the culinary process, understanding the relationship between technique, product and gastronomic concept.
Chefs who aspire to take on greater responsibility, lead creative processes or join high-level teams, bringing method, coherence and analytical capacity to culinary decision-making.

This program is especially designed for kitchen professionals with a solid technical base and professional experience in restaurants, who want to continue advancing in their development, consolidating technical mastery, broadening product knowledge and reinforcing their creative and analytical capacity in real contexts of contemporary gastronomy. To make the most of the training process, participants are recommended to have at least 3 years of previous professional experience in the kitchen.

Methodology
The Master’s in Culinary Arts: Technique, Product and Creativity is delivered through the learning by doing methodology, based on practice, experimentation and collaborative learning. This approach allows you to acquire core competencies and progress toward specialized applications. The curriculum is designed in progressive phases, integrating theoretical classes with practical activities and real projects.
Key elements
- Lectures and presentations: on culinary techniques, product, creativity or the physicochemistry of food, among other topics. Sessions delivered by experts from the gastronomic field that help students acquire a critical and strategic vision.
- Practical workshops: kitchen hours to put into practice the work with products and the techniques of the program: rice, offal, fish, fermentations, new machinery and much more.
- Masterclasses with leading figures in the sector: they address emerging trends, creative processes, authorship and differentiation strategies in contemporary cuisine. These sessions offer a direct connection with the reality of the sector and its leaders.
- Gastronomic activities: tastings, samplings, workshops and sensory experiences aimed at the technical-nutritional understanding of ingredients, their physicochemical properties and their behavior under different culinary techniques.
- Challenges and problem-solving dynamics: designed to strengthen competencies such as applied creativity, time management and adaptability in the kitchen. Each challenge invites students to solve real situations from a professional environment.
- Simulations and practice in real settings: such as the Faculty restaurant, where participants take on active roles in the kitchen and in service. This operating space makes it possible to work under real conditions, executing proposals before real guests.
Learning Journeys
To enhance the learning experience, the Master’s includes meals in leading restaurants and the intensive stay concludes with a Learning Journey of 2-3 days to meet producers and gastronomic projects that have a direct relationship with the product and the gastronomic experience.
In previous editions, students have visited Bodega El Capricho, an exclusive experience around ox meat, and have enjoyed gastronomic experiences in Michelin-starred spaces such as restaurant Ikaro or Barro.
Master’s Final Project
During the Master’s, you will work as a team to develop an experimental gastronomic tasting menu of 15-18 courses, in a project that reproduces a real professional environment.
You will go through every stage of the process —conceptualisation, development and execution— with the support of the teaching team.
The project culminates in a dinner service before a jury of industry professionals and Basque Culinary Center lecturers, who will assess the technical and creative proposal and the overall gastronomic experience.
Curricular internships
You will be able to put your knowledge into practice and gain relevant experience for your professional career. During the process, we manage your internship, taking into account your profile and the opportunities available.
You will have an information session and personalised guidance with the coordinator to evaluate options and adjust expectations. It is important to consider your current situation and professional goals, as internships require three months of full-time dedication, with the possibility of extension. The Master’s in Culinary Arts: Technique, Product and Creativity has a teaching team made up of chef-lecturers from Basque Culinary Center, with recognized academic and professional experience, together with multidisciplinary experts in product, nutrition and food science, essential to understanding cuisine from an integral perspective.
The program is enriched by masterclasses and seminars from leading restaurants, which bring into the classroom an up-to-date vision of gastronomic innovation and creativity.

Alberto Rodríguez
I am a culinary professional with an international career spanning Michelin-starred restaurants, luxury hotels and large-scale gastronomic operations. I began my career in Spain, developing a solid technical foundation in both pastry and contemporary cuisine while training in leading kitchens such as Echaurren, Tickets and 41º by Albert Adrià.
I later expanded my career across Europe, Asia and the Middle East, taking on leadership roles in prestigious establishments such as The Peninsula Beijing, Aqua Group Hong Kong and La Serre Dubai, where I refined a culinary approach based on product, technique and innovation.
In recent years I have combined kitchen leadership with educational and strategic responsibilities, working as Senior Expert in Culinary Innovation and Global Professional Trainer at Basque Culinary Center, designing advanced training programs and leading professional development initiatives internationally.
Christian Marquina
I am a chef specialized in Technique, Product and Creativity. My career has developed between haute cuisine, team management and the strategic support of gastronomic projects.
A Food and Beverage Technologist and holder of the Master’s in Culinary Technique and Product from Basque Culinary Center, I have worked for more than 15 years in highly demanding international environments. I began my professional career in Ecuador and continued my development in various kitchens in New York, before consolidating my path in Spain, working in restaurants such as Mugaritz, Miramar and Cal Enric, linked to projects recognized by the Michelin and Repsol guides.
I am currently a lecturer at Basque Culinary Center and coordinate the culinary area of Lifelong Learning.

Tutor de Curso
He holds a degree in Gastronomy from the Colegio Superior de Gastronomía de México and a Master’s in Restaurant Pastry and Sweet Cuisine from Basque Culinary Center. After working in restaurants such as El Bajío (Mexico), Il Postino (Mexico), Uasabi (Spain), Indio Malo (Spain), La Scala (Spain), Bodegón Alejandro (Spain), A Fuego Negro (Spain) and Amelia* (Spain), he is currently a lecturer and tutor on Basque Culinary Center cookery courses. He has also worked as a research chef at BCC Innovation.
Profesor BCC
A chef with an international career in fine dining, he began his career in Argentina at acclaimed restaurants such as Aramburu and Elena. He later spent eight years in Scandinavia working at Michelin-starred restaurants 108 and Maaemo, strengthening his technical, product-focused approach. He has also led several gastronomic projects in Norway as founder and executive chef.

A pastry chef with 22 years of international experience, trained in France. He has worked in pastry ateliers, hotels and Michelin-starred restaurants. Recognized with national awards and with experience as a coach on Bake Off España, he is the coordinator of the Master’s in Restaurant Pastry and Sweet Cuisine at Basque Culinary Center.
Profesor BCC
An agronomist and specialist in baking technology, he teaches food quality, product and bread-making. He brings technical knowledge and a practical approach to processes, fermentations and grain transformation.
Profesora experta
Technical coordinator of the Master’s in Restaurant Innovation and Management. She holds a PhD with International Mention in Business Administration, an Executive MBA and a Master’s in Marketing from the University of the Basque Country. Adela is currently a Research Fellow at the University of Oxford. Trained in coaching at New York University and Stanford University, she is a researcher in tourism and management, a trainer for national and international companies, a mentor for entrepreneurs in Silicon Valley and a visiting lecturer at universities in countries such as Germany, France, China, the United Kingdom and Switzerland.

Diploma in Human Nutrition, Bachelor's degree in Food Science and Technology, and Ph.D. in Agro-Environmental Technology for Sustainable Agriculture. María specializes in sensory analysis and sensometrics, with an emphasis on the psychological dimension of consumer behavior. During her thesis, she studied the emotional response of consumers to different foods. Since 2015, she has worked as a researcher in the sensory analysis area at BCCInnovation, developing research projects funded both publicly and privately.

Miembro Activo
Colagreco (La Plata, 1976) grew up and studied cookery in Buenos Aires but has developed his culinary career in France, where he arrived in 2001. His first opportunity led him to learn from Bernard Loiseau until the death of this prestigious chef in 2003. He then continued his training alongside national figures such as Alain Passard, Alain Ducasse and Guy Martin. In 2006 he moved to Menton, a beautiful tourist town on the Côte d’Azur near the Italian border. There he took over restaurant Mirazur, with which he earned his first Michelin star in less than a year. Thanks to its privileged access to coastal and mountain produce and to Colagreco’s talent and creativity, Mirazur has been among the top four of The World’s 50 Best Restaurants since 2016.

Sydney-based chef Josh Niland has transformed the way we cook, transport, age and store fish. His ethical, sustainable and groundbreaking whole-fish, no-waste approach has received worldwide recognition. A multi-award-winning chef, restaurateur and James Beard Award winner, he now has four spaces: Saint Peter, Charcoal Fish, Fish Butchery Paddington and the recently opened Fish Butchery Waterloo. He is the author of two books, “The Whole Fish Cookbook” and “Take One Fish”.

Admission process
The Master’s in Culinary Arts: Technique, Product and Creativity has an admission process that ensures candidates have the academic level and competencies needed to successfully complete a demanding study program.
This Master’s is aimed both at professionals with university studies and at those who, without holding a university degree, can demonstrate relevant experience in the sector.
Basque Culinary Center’s admission system has a dual objective:
- To ensure that candidates have the academic level and personal competencies needed to successfully take on an innovative, practical study program.
- To check that the Master’s meets the training needs and interests of the candidates.
1. Submit your application
Complete the online application and pay the registration fee of 150 €, refundable if you are not admitted.
Complete the Application Presentation Questionnaire, which will help us get to know your profile and your interests in the Master’s. Please have the following documents ready:
- Updated curriculum vitae.
- 1 passport-sized photo.
- Copy of your ID card or passport.
- Academic certificate of the studies completed (transcript, diploma or certificate). - Submitting certificates is not compulsory, but including them will be valued positively if you have them.
2. Evaluation of your application
- Take part in the online personal interview with the Master’s Coordinator, an opportunity to get to know you better, resolve doubts and raise questions about the program.
- Both the documentation submitted and the outcome of the interview will be assessed.
- You will receive the admission decision together with the next steps to follow.
3. Admission and seat reservation
If you are admitted, you will need to pay 25% of the Master’s fee within the indicated period to reserve your place.
Notice for international students
To take a training program lasting more than 90 days, students from countries outside the Schengen area (check the list of countries) need to apply for a LONG-TERM STUDENT VISA in order to reside legally in Spain. The Faculty will provide each student with the documentation needed to process the visa once the place reservation has been confirmed.
In addition, the student must complete the remaining requirements indicated by the Embassy of Spain. You can consult the full process in this section on pre-travel procedures. Basque Culinary Center will provide the following academic documentation, required for the visa application:
- Enrollment certificate signed and stamped by Basque Culinary Center.
- Study program stamped by Basque Culinary Center.
- Academic calendar stamped by Basque Culinary Center.
Fees and payment
Total Master’s fee: 17.740 €
Payment method:
- 150 € upon application, fully refundable if you are not admitted.
- Upon confirmation of admission, 4.397,5 € as a place reservation.
- The remaining amount will be paid in 3 installments of 4.397,5 € in October, December and February.
The Master’s fee includes:
- Basque Culinary Center uniform.

If a visa is required due to nationality, a type C (Schengen) visa must be requested to enter Spain.
International students must travel with the official documentation accrediting their enrollment on the course and proof of the health insurance that will cover them during their stay in Spain.
SCHOLARSHIPS AND FINANCIAL AID FOR MASTER’S PROGRAMS
Due to the official nature of the degree, students legally residing in Spain may apply for public scholarship or aid programs. International students can also seek funding and scholarships from institutions in their home countries that support studying abroad.
ERASMUS+ SCHOLARSHIPS
Students may apply for international mobility aid to complete internships in Europe under the Erasmus+ program.
EMPLOYABILITY SUPPORT FOR STUDENTS
To support students in finding employment during or after their studies, students on this Master’s will receive information on job offers received by the faculty.
During their stay they may also apply for the study-work scholarships offered by the Faculty and provide services in different departments: R&D, operations, cafeteria, etc.
