The Course in Dining Room Management and Guest Experience is aimed at hospitality professionals with dining room experience who want to advance in their careers and take on new responsibilities, as well as dining room managers currently in the role who want to consolidate it with greater judgment, method, and business vision.

Throughout the course, you will develop key competencies to manage the dining room from a current, practical, and strategic perspective, covering topics such as: team leadership, communication, guest experience, sales, operations, and profitability.

All of this with an approach designed for people who already know the reality of service and need to take the next step in their professional development while staying connected to the day-to-day of the business.

From hospitality and people management to experience design, product knowledge, service optimization, and the financial view of the dining room, this course offers practical tools to professionalize the dining room role and strengthen its contribution to the restaurant as a whole.

On-site week at Basque Culinary Center to complete your training

The program also includes an on-site training experience at Basque Culinary Center that adds distinctive value to the learning.

This intensive module will allow you to put into practice the content covered during the online portion through workshops, tastings, applied activities, service exercises, and analysis of real dining room situations. An opportunity to train competencies in a specialized setting, share experiences with other professionals in the sector, and go deeper, through direct experience, into key aspects such as sales, product, communication, and guest experience design.

Methodology

The educational methodology combines different approaches and activities that ensure solid, practical training. This methodology allows students to develop leadership and dining room management skills adapted to the needs of the sector.

100% Online and Practical Methodology

  • Virtual sessions: Sessions focused on learning theoretical content and developing practical skills related to dining room management in the gastronomic sector. Throughout the learning process, different guest professionals will share their successes and failures through digital formats.
  • Methodology applied to the professional context of foodservice: All course content is designed to be applied immediately in the student’s work environment.

    Examples, exercises, and cases are adapted to different foodservice models, so each participant can transfer what they learn to their own professional reality.

  • Active student participation: Encouraging the exchange of experiences among professionals.
  • Experiential, practical on-site phase: During the on-site part of the program, students will apply the content covered in the online environment through practical, intensive learning.

    This phase will take place through dynamic classes oriented toward experimentation and application, including tastings, technical service workshops, communication and leadership activities, presentations of work, and activities linked to designing dining room experiences. Learning visits will also be made to benchmark establishments, making it possible to observe real models and reflect on different ways of understanding service and dining room management.

  • Challenge-based methodology: The program uses a challenge-based approach in which students take on a professional situation or challenge set by the faculty, linked to dining room management, the guest experience, or service improvement. Throughout the course, participants will work on analyzing and developing applied solutions, integrating the knowledge and tools they have acquired. The process ends with the presentation of the challenge, encouraging reflection, decision-making, and practical application in real contexts in the sector.

With more than 25 years of experience in the foodservice sector and 20 years of teaching in the specialty of guest service, he is Coordinator of the Dining Room and Guest Service area at Basque Culinary Center. He teaches several subjects and tutors projects in the Expert Course in Bartending and Creative Mixology. He specializes in fermented beverages, spirits, and dining room service techniques, with a practical focus on presenting dishes in front of the guest.

If a visa is required because of nationality, a type C (Schengen) visa must be requested in order to enter Spain.

International students must travel with the official documentation that proves their enrollment in the course and proof of the health insurance taken out, which will cover them during their stay in Spain.
